食品中痕量亚硝酸盐的压电频移分析
Determination of microamount of nitrite in foods using piezoelectric crystal detector

摘要: 研究了用压电频移分析法测定食品中的痕量亚硝酸盐.方法以碘离子与亚硝酸根之间的氧化还原反应为依据,通过测定由反应生成的碘所引起的压电晶体频率的变化,在被萃取水相中亚硝酸盐浓度为7×10-7-3×10-5 mol/L范围内,频移值与浓度成正比:Δf(Hz)=0.29+2.6×107c(mol/L),相关系数r=0.992 8.方法简单易行,用于肉制品、蔬菜中亚硝酸盐的测定,并与经典重氮偶合法作了比较.Abstract: A piezoelectric crystal detector method is propsed for the microdetermination of nitrite.The method is based on the redox reaction of nitrite with iodide to from iodine,then extract it with CCl4 and measure frequency change of the piezoelectric crystal caused by the inborned iodine.In the range of 7×10-7-3×10-5 mol/L of nitrite concentration in water,vibration frequency change is in direct ratio to consistency:Δf(Hz)=0.29+2.6×107c(mol/L),correlation coefficient of 0.992 8.The method is very simple and has been applied to determine nitrite in foods.
